Challenge
Renovating a university’s main production kitchen presents significant logistical challenges, particularly when campus dining operations must continue serving a large and changing population. The University of Minnesota Duluth needed a temporary solution that could support foodservice operations during construction without relying on the permanent kitchen.
✓ Maintain Campus Foodservice: Support ongoing meal preparation for students, faculty, and staff during the renovation.
✓ Accommodate an Extended Construction Schedule: Provide temporary kitchen capabilities throughout a renovation period spanning multiple academic terms.
✓ Coordinate with Campus Operations: Integrate a temporary kitchen into an active university environment while accounting for site access and operational requirements.
✓ Support a Smooth Transition: Allow foodservice operations to transition between temporary and permanent facilities as the renovation progressed.
