Challenge
In a healthcare environment, shutting down food service during construction isn’t an option. Citizens Memorial Hospital needed to remove its existing kitchen and cafeteria from service as part of the expansion while continuing to prepare meals every day.
Provide more than additional cooking capacity
Replace the essential functions of the permanent kitchen-including production, food preparation, warewashing, refrigerated and frozen storage, and dry storage-for an extended construction period.
Integrate into an active hospital campus
Support an efficient transition so demolition and construction proceed without interrupting food-service operations
