Challenge
A major foodservice renovation within an active military medical center requires careful planning, substantial production capacity, and coordination across multiple construction disciplines. SAMMC needed a temporary kitchen facility capable of supporting complex institutional foodservice operations while its Department of Nutritional Medicine underwent improvements.
✓ Maintain Essential Foodservice Operations: Provide temporary commercial kitchen capabilities to support the medical center’s institutional meal production requirements during construction.
✓ Accommodate Large-Scale Kitchen Functions: Establish sufficient space for production, preparation, warewashing, and supporting foodservice activities within a temporary facility.
✓ Coordinate a Complex Installation: Address the logistical challenges of delivering and assembling 20 interconnected modular units within an active military healthcare environment.
✓ Support the Construction Schedule: Coordinate the temporary facility deployment with JE Dunn Construction and the broader Department of Nutritional Medicine addition and alteration project.
