Challenge
In a healthcare environment, shutting down food service during construction isn't an option. Citizens Memorial Hospital needed to remove its existing kitchen and cafeteria from service as part of the expansion while continuing to prepare meals every day.
The temporary solution needed to provide more than additional cooking capacity. It had to replace the essential functions of the permanent kitchen—including production, food preparation, warewashing, refrigerated and frozen storage, and dry storage—for an extended construction period.
The facility also had to integrate into an active hospital campus and support an efficient transition from the existing kitchen so demolition and construction could proceed without interrupting food-service operations.
